The Double Eagle is proud to have served our Margarita Recipe for over 30 years!
In the Southwest, we take our Margarita seriously! We don’t know who actually ‘invented’ putting lime juice in tequila but bless him! (or her!) We acknowledge that the simple act of combining of tequila and lime juice was the original Margarita recipe. So, when people talk about the ‘original recipe’ , this is what they usually mean: A fire-y shot of burning liquor only lightly tempered by the tart lime juice.
But, even tequila afficienados must acknowledge that when presented with an ‘original recipe’ Margarita, most people go “yeech”! Like most things in Life, practice makes perfect. So, too, does learning to drink tequila! Almost the equal of drinking Scotch as a learned behavior, drinking tequila can offer the challeges and rewards of many varieties.
Over the years, we have developed our own recipe which ‘soothes the savage beast’ and calms that burning liquid into a smooth cocktail which has been the favorite in our Bar for over 30 years.
Know Your Tequilas
Made from the fermented juices of the blue agave plant – related to the lily and amaryllis – the only one of 136 species of agave allowed for use in tequila. Agave plants are grown in the Lowlands and Highlands of Mexico. Lowland tequilas are deeper and mellower than Highlands. Highlands are fruity and aromatic.
Mixto 51% Agave with the rest being cane sugar, alcohol and caramel coloring
Silver/Blanco 100% Agave – clear, very spicy, never aged, goes straight to the bottle from distillation
Reposado Means “rested”, aged in oak barrels usually 6 months, takes on the flavor of the barrels in which it is aged – some are new oak, some are used bourbon barrels, some are used tequila barrels, these factors affect the taste characteristics
Anjeo Means “aged”, aged 1 to 5 years in oak barrels holding no more than 600 gallons, longer ageing gives a darker, richer color
The Double Eagle carries some 30 different tequilas. We have chosen these from the hundreds of brands which have appeared and disappeared over the years. We believe these are the ‘winners’ with other brands either tasting the same as the brands we have or they bring nothing new and different to the table.
The House Margarita Jose Cuervo Gold Tequila - that old standby favorite, Triple Sec, Rose’s Sweetened Lime Juice and Sweet N Sour with a squeeze of lime. Simple, basic, nothing fancy but this blend has a calming effect on the firey tequila that most people like.
The Classic Gold Margarita A premium Sauza Hacienda Reposado Tequila, imported Citronage Orange Liqueur, Rose’s Sweetened Lime Juice and Sweet N Sour with a squeeze of lime. We have stepped up the flavors and the smoothness. The mouth feel of this recipe vs. the House is definite and distinctive.
The Award Winner Margarita A yearly tradition in El Paso, the annual Margarita Shake Off was always a Big Deal. Held in the largest bar in El Paso, over 30 bars and restaurants participated and over 2,500 people attended the Tasting and raised money for a local charity. In 2002, many of our El Paso customers insisted we participate saying we would be sure to at least place in the contest and, besides, it was for charity. We agreed and decided upon our recipe and strategy. It seems strategy was a key component since many booths let people taste one recipe while submitting a second, secret recipe to the judges. Since this was our first time, we were unaware of the need for strategy, made our batch and gave out the tastings to raves from the people.
And, we sent the same recipe to the judges. And, they raved as well awarding the Double Eagle the 2002 Margarita Shake Off Trophy which sits behind the bar today The shock of the Best Margarita in El Paso being in Mesilla, New Mexico was such a trama that the contest was not held again! (Actually, the major sponsor pulled out and the contest was not organized the next year or thereafter!)
We use Sauza Hacienda Reposado Tequila, Citronage Orange Liqueur, Gran Gala Orange Liqueur, Fresh Lime and Orange Juice, Sweet N Sour with a squeeze of Lime and Orange. Smooth and slightly sweet
Turquoise Margarita A special recipe including a genuine Southwestern Turquoise stone used as garnish! We use a special premium Tequila made the old fashioned way in small batches named El Tesoro - The Treasure. And treasure it truly is. Although expensive, it’s flavor is classic. Using this 100% Blue Agave distillate, we add Citronage orange flavored liqueur, Rose’s Sweetened Lime Juice, Fresh Lime Juice and Blue Curacao for a perfect Turquoise color. Smooth and delicious!
